To answer your question about how long it will take in a dehydrator, my manual said between 6 and 12 hours. I turned it on overnight, so it had been drying for about 8.5 hours when I checked it this morning. They looked perfect, so I took them out and stored them in a plastic container. But they immediately fogged up the container, which the manual indicated meant they weren't completely dry yet. So I popped them back in for another 30 minutes and no more moisture.

The original recipe offered here turns them out much faster. I don't know whether the two methods end up with different textures or tastes. I haven't compared the two. The oven-dried recipe doesn't mention blanching the potatoes first, so it sounds easier and quicker compared to the dehydrator. But since I've spent money on a dehydrator, I guess I'll continue to do it that way. :>)
