Why remove the bones?

Why remove the bones? Salmon bones are soft and I should think they would add some nutrition to the treat.

Chef's Answer ~ You're right, salmon bones, especially for salmon that comes in a can are quite soft. The direction to remove the bones is more of a safety precaution. It's a reminder to be aware that there could possibly be bones and you may want to remove them.

If the bones in the can of salmon are small and can be crushed into the salmon, I would think that would be fine for the recipe and would indeed add to the nutritional component.
