What can be used in lieu of cornmeal?

Not yet tried but the kids love salmon and love mint.

I need to have a substitute for the cornmeal though.

Chef's Comments ~ If you need to substitute the cornmeal because you do not have it in your pantry, you can use an equal amount of one of the following: polenta, corn grits, or maize meal.

If you need the substitute because one of your "kids" :) is sensitive or allergic to corn, that's a little difficult. My best suggestion would be to use 3/4 cup of potato flour with 1/4 cup of rolled oats to substitute the 1 cup of cornmeal. The reasoning is that the stone ground cornmeal has a nice texture to it, and substituting just flour would not yield a similar treat. The potato flour is a heavy flour, and the oats would lend the texture. Please keep in mind that I have not tried this substitute, so I can't guarantee how it will turn out. But, I think that it's your best bet.
