Banana Pecan Dog Muffins instead of a Cake?

Can I make this in mini cupcake form? A big bunt cake or even cake rounds are much too big for your chi babies. Thank you!

Chef's Answer ~ Yes, you should be able to make mini muffins instead of a cake. I recommend watching the baking time very closely. Since they're considerably smaller, I would check the muffins after 8 to 10 minutes with a toothpick to see if they are done.

Hi, can I use canola oil instead of the butter? If so, how much should i substitute?

Chef's Answer ~ I have not tried substituting butter for oil, but according to one source you can substitute olive oil for butter. For the 1/2 cup of butter that the recipe calls for, you would replace it with 1/4 cup and 2 tablespoons of olive oil.
